A recipe to help with a surplus of Courgettes!

Slow Cooked Courgettes with Garlic and Mint



If you're deluged with courgettes as we are this is a great recipe to cook them in a different way to the norm.



Serves 6



6 medium sized courgettes sliced as thinly as possible

3 tbsp olive oil

3 cloves garlic peeled and finely chopped

Salt

Handful of mint leaves finely chopped

Squeeze of lemon juice
